Add onion, garlic &amp; ginger.  Cook until fragrant (about 5 mins).&lt;br /&gt;Add curry paste and cook briefly, to combine flavours.&lt;br /&gt;Add carrots, stock, maple syrup, lemon juice and sea salt &amp; pepper, then bring to a boil.
